I went down to visit Max this weekend at his grandparents house in Ventnor City, New Jersey. Tagging each other in recipes on Facebook and Instagram has become one of our favorite past times, especially while enjoying quality time inside all winter. On Saturday afternoon, while sitting on the couch, I found this recipe from Delish, which turned out to be a recipe from The Recipe Critic!
I thought the recipe looked delicious, and Max immediately agreed. He decided that we must make the cookies that afternoon, so we looked for ingredients at home. We then set out to the store with our shopping list. After picking up a lemon, blueberries, flour and some Spindrift seltzers, we went right home to get baking.
The cookies took a bit longer too cook than anticipated. I made them a bit larger than in the photos, because who likes a small cookie, right? The first batch came out a bit softer than the second, but they were delicious nonetheless. When I made the first batch, I thought to myself, “wow, thats a lot of berries.” In an effort to not crush the blueberries, the middle of the dough was lacking. When I made the second batch, I was really trying to make sure there were a good amount of berries in each cookie. My recommendation would be to gradually mix in the blueberries and make smaller balls of dough if you prefer crispier cookies.
Overall, they were a huge hit. Max and I couldn’t wait to try them as soon as they came out of the oven. His parents, aunt and uncle loved them, my sister and parents loved them. My dad literally was chewing the cookie and saying “de-licious.” I can’t wait to make these again, hopefully in the summer with fresh blueberries from Morning Glory Farm!
