I had been planning to have a taco night for quite a while now, and while shopping at Trader Joe’s for the ingredients, I found this Mexican style roasted corn in the frozen section. I love Mexican street corn, so I was excited to add this to my turkey taco bowl recipe!
The taco bowl turned out even better than I had planned thanks to some key ingredients which I will list here! This was also very filling, and I had enough leftover for another meal, which is ideal for me!
Overall, the Mexican street corn was delicious and easy to cook. I would recommend following the pan sauté directions, however I felt that it did not take the 5-7 suggested minutes. I could tell it was done because the sauce was starting to stick to the pan slightly and I took it off the heat at the perfect time.
The other key ingredient that changed up my turkey taco bowl was the chili lime spice that has been all the rage. I originally put it on mango, and thought it would be great mixed with the ground turkey, and some on top. It was the perfect addition, not to salty like taco seasoning, yet still flavorful!
Find the other ingredients below:
Mexican style roasted corn
Chili lime seasoning
Frozen brown rice (so easy to cook and no clean up!)
Mista Veggie Blend (I added these warm veggies since I didn’t have any lettuce or salsa to put on top!)
Follow directions on the packaging of the ingredients, and combine in a bowl with rice as the base, and enjoy!
